A rather quick post from me and one that doesn’t really need much chat (you’ll be pleased about that….). Introducing Mymonkfish’s wicked three tier red velvet sponge cake with cream cheese frosting made especially for the lovely ladies (and the odd gent) of the ‘Edinburgh Cake Ladies’.
This red velvet lovely was unveiled at the second meeting of 2011 of the Edinburgh Cake Ladies club. Numerous calorific delights were presented at the meeting and after a few attempts of trying to beat the current ‘cake consumption record’ (11 slices….), Miss Spotlight left us awestruck after wolfing down TWELVE slices. What a professional. I managed a measly few slithers…lightweight.
A quick nod to the Hummingbird Bakery for the recipe which appeared to be foolproof as Ms Velvet turned out a treat. She was as light as a feather, beautifully moist and just melted in the mouth, delicious! This was the red velvet cupcake recipe which appears on page 20 of the original Hummingbird Bakery cookbook. Just double up the quantities for the sponge and the topping and that will see you right.
This is the first time I’ve knocked up one of these beauties but it certainly won’t be the last, I can see this baking malarkey becoming a full time job in our house *mr predictable practically passes out with delight*.
